Fall 2017 Catering Trends

 

Fall 2017 Catering Trends apply even to desert cities such as Phoenix, Arizona although our temperatures may well remain in the 90’s through October!  Nonetheless, our mornings and evenings are cool and the “feel” of Fall evokes desires for Fall cuisine.  We naturally think of soups, Fall vegetables such as acorn and butternut squash, heavier pastas, and roasts.  Our Culinary Director and chefs are busy creating and sampling new items, always focusing on fresh and local.

CORPORATE EVENTS AND WEDDINGS

This Fall, we are again excited to work with our corporate and wedding clients in creating menus that appeal to the theme of the event as well as the time of year. Whether a buffet, butler passed hors d’oeuvres, food stations, or family style dining, the options are endless for incorporating the look and feel of this wonderful season which of course also includes Thanksgiving.

EXPERIENTIAL DINING

The trend of experiential dining continues to reign.  Our wedding clients are often opting out of a sit-down dinner and choosing only heavy passed hors d’oeuvres or unique and modern food stations.  When it comes to food stations, there truly is no limit to creativity and food options. We have created fresh pasta stations utilizing our in-house made fresh Pasta Rea pastas and sauces.  Guests are delighted to enjoy interesting pasta shapes such as gigli, lumache, fiore,buccatini, and of course the regulars of rigatoni, fettucine, and spaghetti.  The beauty of a pasta bar is it can satisfy gluten-free (gluten free pasta), dairy-free, and vegetarian guests. There are many creative ways to serve the pasta from the standard pasta bowl to martini glasses, and interesting glass and ceramic vessels.  Pasta food stations are of course not limited to weddings as they make for a lively corporate event and encourage mingling and networking.  Other food station options can include taco bars, seafood stations, sushi stations, potato bars, and stations as simple as peanut butter and jelly or Oreos and milk!

COCKTAILS

And, of course, one would be remiss if the popularity of cocktails was not mentioned.  Signature event drinks are in vogue as are the classic cocktails of yesteryear such as manhattans, classic dry martinis, and Negronis.  Consider having a qualified bartender create a drink themed to your event.

FALL COLOR TREND

Tired of grey?  This year’s color alternative to grey is navy blue and we love the substitution of navy for black and grey.  Navy is often misinterpreted as very East Coast or at times nautical. In incorporating the color navy into events we’ve been very pleased with the versatility of it and the “softness” of it compared to black.  For a crisp look, navy and white is a great option or if you want a pop of color, add a bright pink. The ever so popular grey can even be incorporated with navy if it’s the appropriate shade of grey.
